I don't know where to begin in finding proper accommodations for us.

Anyhoo...have you thought about cruising? Good value and lots of plusses re accessibility. Many will help you to hire equipment and have adapted cabins though the quality varies enormously. Downside is that some ports are not accessible for wheelchair users so careful research needed. Long cruises work out good value for money too. I have been looking into it and came across this site which has some damn good info on different cruise lines/ships facilities. Thought I'd share:
