Hi jesse, I've been thinking about the kind of things that I have enjoyed doing and they have included going to a theme park as they are usually quite flat, the zoo, basketball (i am still a fair bit better than my friends lol) Boat trip, barbecues, visiting places.
Outdoor concerts?
Do you like fishing? il keep thinking of stuff to do, depends on what is going on in your area I guess and what is easy to access also.
Why not get your friends in chairs and have a go at wheelchair rugby? it's great fun!
Take a look at this link, it may have something interesting for you

Hi there Jessie
The beach is a wonderful place, especially if it is wheelie friendly, most people post about exercise but for me hours on end snorkling on rocky beaches away from human activity gives me a wonderful insight into the water world, and a great workout too. here in Malta we are blessed with a hot summer and wonderful sea.

I've snorkeled some, besides the beauty of it all there is a certain quiet about being under water, a calmness. Swimming is great exercise. I'd like to get my family out camping. I love being in the woods.
