I love ice cream, but I have no control over what time the van will pick me up from the grocery store. So, a couple of times, I've eaten my Haagen Daze ice cream while sitting in front of the grocery store...waiting for the van...before the ice cream can melt. (Too much sugar on an empty stomach!)
Hmmm. I have a freezer. I have heavy whipping cream, egg yolks, vanilla, Blue Agave Syrup, and a dash of Himalaya Pink Salt. Also, I have Organic Instant Coffee! "Have Ingredients, Will Make Ice Cream." Yes, I made a delicious, small (two egg yolks) serving of coffee ice cream today. Since it was 'coffee' ice cream, and I ate all of it this afternoon, I will probably be awake all night. Feel free to message me tonight.
After 4 hours in the freezer, in its small plastic container with snap-on lid, I gave it a stir, and returned it to the freezer for about another hour. It's texture was between that of 'soft serve' and snow ice cream. But I can guarantee that the ice cream was as healthy as the best ingredients available at the grocery store...and it filled a lonely spot in my memory that longed for occassional ice cream.
I have some organic bananas right now, Sam, but I don't have the walnuts. I only have cashews. I'll make some with cashews and let you know how it turns out.
I made ice ceam with bits of fresh banana and chopped cashews just after noon and ate it an hour ago. It was delicious. However, I used roasted, salted cashews from a can and...the salt was never going to let the ice cream get very hard. So, it was more a really good 'slurpy' than ice cream. Thanks for the suggestion, Sam.
