I spent a few days at Disney and Universal and i was impressed by how wheelchair friendly the parks were and also by how friendly the staff were towards rollers. I was able to access every part of each park I visited. Getting on the rides themselves is a whole different animal but it was very simple to get to the boarding point. I have decent balance and stamina so i was able to get onto all the rides with relative ease. For those without my luck, bring a strong friend just to be safe. For those who can't walk at least a little or transfer easily, it would be a bit more complicated. Once i got onto the ride, they would take my wheelchair and leave it for me where the ride ended. Each park also provides rental wheelchairs(the low quality ones you see at hospitals) and rental scooters. WC/scooters are rented on the parks and cannot leave the parks.
Some local hotels provide a shuttles to the parks(probably for traffic/parking management). The regular shuttle would not take my wheelchair so they accommodated with a Benz Sprinter. My power assist WC weighs less than 50lbs so they were able to manually put it in by hand. For powerchairs, call in advance to see what can be done.

Florida is definitely a place I'd like to visit one day and I've always wanted to go to Disney World & Universal Studios too. I have heard that they're very wheelchair accessible and that's a great thing. I'm probably going to need people to lift me into the rides since it's a quick process but overall it seems like it'd be pretty easy
Disneyland in California is also extremely wheelchair friendly. There are a few hills to overcome in the park but it doesn't detract from a good time. Just don't be in a hurry to get from one end of the park to the other without taking a break.
