With the talk about the importance of diet I thought we should have a thread dedicated to healthy quick meals or snacks. Post one per thread but post as many times as you like.
So I will start with one meal that i eat regular....its a very lazy meal! lol
Chicken with beansprouts, onions, rice and low fat curry sauce.
boil beansprouts with a sliced onion for approx ten mins boil some basmati rice dice some cooked chicken breast heat up the curry sauce
I don't actually have much rice at all, probably approx 5 spoons cooked, lay it on the plate and then drain the beansprouts and onion and place on top then add the diced chicken breast and pour over the sauce
In total it takes approx 15 mins and you could add peppers for more taste and crunch
1 onion 2 carrots 1 leek half a yellow pepper 2 courgettes 1 stock cube (increase any of the quantities to make for more people...the above will do approx 4/5 servings)
How to make... Just chop all the veggies into small cubes, throw them in a pan..cover with water and the stock cube. Cook for approx 40 mins and then mash and season to taste...so easy Eat with crusty bread
wavewolf, I love those celery & baby carrot dips but I've only used like a creamy Caesar dressing dip. Peanut butter sounds like a great combination, I'll try that out next time!
Talking of food can I ask for those who are unable to walk how many calories do you need to eat with out going over and gain weight? It must be hard to maintain an healthy weight when you are not very mobile. how do you burn off your calories. I am very immobile even though I can move around a bit. And not been very tall I gain weight very fast.

Weight...or keeping weight down is very important for people with Spinal Cord Injuries mo and for people who are in wheelchairs due to other disabilities as you are. Many people with SCI are already on bowel programmes so eating healthy is often an already consideration. I have also found that we are also pretty much aware of the need to exercise and keep active as much as function allows.
I know there will be guidelines on calorie intakes but to be honest i personally think if you eat healthy and stay active as much as possible then its the best you can do.
Many individuals with SCI, if they have hand function will self wheel so they are getting exercise in that way...some have hand cycles or leg bikes, attend regular physio sessions or carry out daily exercises at home, go to aqua therapy or join sports. There is a school of thought of 'use it or lose it' so emphasis is on being active to prevent bone density loss and heart disease and other problems. Also being active takes the mind off nerve pain too.

Gaining weight was my biggest concern when I first got injured because I love food & love eating but had no effective way of losing weight. I always did physio and made sure I ate somewhat healthy but I've definitely gotten better with my eating and exercising. I also find it's better for my bowels and just my energy in general so that's me killing two birds with one stone whenever I eat healthy and workout hard
